Epic doesn't even begin to cover this heavenly new boozy brunch that just launched on the 118th floor of The Ritz-Carlton Hong Kong. They had me at free-flow Dom Pérignon Vintage 2006 and unlimited carvings of the world's best Iberico ham - but wait, there's more. As if this weren't already an incredible enough offering, throw in Ozone's sky-high setting and a delicious brunch buffet by Chef de Cuisine Rafael Fernandes that snakes across the entire floor of the famous bar-lounge, and you've got yourself the ultimate Dom Pérignon Sunday Brunch. Priced at HK$1,298+10% per person for brunch with free-flow DPV 2006 or HK$2,198+10% with free-flow Dom Pérignon Rosé 2004, Dom Pérignon has officially stepped up the city's brunch game with this incredible new deal.

I thought I had my fair share of great hams while in Spain recently, but I gotta say, the Joselito Pata Negra served by the on-site ham master carver in Ozone was in a different league of its own. Vouched for by the likes of Ferran Adria, Quique Dacosta and Joel Robuchon, the quality and texture of the cured ham leg reflects the happy upbringing of the free-roaming Iberian pigs on Joselito farms. The unique and highly controlled underground curing process of the meat over 36 months also ensures that each leg is a true work of art. If you look closer at the ham slices, you'll notice little white crystal-like spots all over them (tyrosine). They basically indicate a prolonged curing period, and that the ham is of the highest possible quality. The DPV's nutty notes come out beautifully when matched with the Joselito Pata Negra, and I highly recommend you to give this pairing a try while this promotion is running.

All-you-can-drink Dom Pérignon Vintage 2006 on ice, served straight to your table as soon as you need topping up. At this brunch, there's no such thing as an empty glass!

I had a mini heart attack when I saw this section of the raw seafood appetisers counter. Crab, lobster, and a massive shrimp tower to the left. So much delicious seafood, so little stomach space. I was actually at a loss for where to begin at this buffet. Aside from this crustacean pile-up, the raw buffet also includes high quality sushi, assorted sashimi, and ceviches.

The Pacific Rock Oysters were served fresh to our table with condiments. I couldn't even believe that on top of the endless varieties of offerings at the buffet, there were still more new dishes that came out of the kitchen.

The ham captured in all its majestic glory, towering above Hong Kong at 118 floors high! But for real, this was so good. I always said that if there was one thing I could keep eating without fail, it was jamon. And now that I have this option (with the best ham in the world, no less) I have a feeling I'll be making a trip back to Ozone pretty damn soon.

Make Your Own Bloody Mary station! This is one section of the buffet I (surprisingly) had zero need or want for given the free-flow Dom, but I love the idea of it and think you should know it also exists as a boozy option here ;)!

More appetisers, including colourful salads, cheeses, fruits, anchoas, and more. Beyond this counter is a live eggs benedict station, as well as a grill station with delectable selections of wagyu 'Picanha' beef, grilled pineapple, prawns, and the like, which can be enjoyed with a side of some of the best truffle mash I've had in HK!

The desserts. I made sure not to fill up too much on the apps/mains, as hard as it was, because there were so many dessert options available. Pictured: mini martini glasses of tiramisu.

On top of the mini-sized portions of Ozone's famous desserts were towering stands of macaroons and choux, with Belgian chocolates scattered around the base. My kinda dessert station.

There was even a Haagen-Dazs section, and a build-your-own live dessert station - perfect even for the little ones if you bring them along. The meal never ends.
